North Carolina malt and unmalted wheat, foraged sumac, wildflower honey and limes, fermented with a house blend of three strains of Brett.

A: The beer is slightly hazy yellow in color and has a moderate to high amount of visible carbonation. It poured with a two finger high bright white head that died down but left a short head covering the surface.
S: Light aromas of wheat are present in the nose along which notes of limes and hints of yeast.
T: The taste follows the smell, having flavors of wheat along with notes of limes and yeast.
M: It feels light-bodied on the palate and has a moderate amount of visible carbonation. No dryness is perceptible.
O: This beer is rather light in body for a saison, which I'm assuming comes from the use of wheat. It has some refreshing properties.

A smallish head that dissipated rather quickly. Honey and lime in the nose. Subdued yeast in the initial taste (maybe due to the honey/sumac/) finishing with lime. I feel like the lime and to a lesser extent, the honey, got the best of this batch, and didn't allow the 3 strains of brett to shine. Considering I tasted this directly after their rice saison, this one paled in comparison.
