Barrel-Aged Peach Sour
We pulled the 2018 Vintage of our bespoke beer for Cool Vines out of the cellar. A Saison fermented directly in a White Wine Barrel with a mixed yeast and bacteria culture to give it a funky, oaky, sourness. Peaches are added to round out the fermentation driven complexity with fuzzy, stone fruit essence.
