i have never been a huge fan of straight up french saison yeast by itself in terms of the flavors it imparts as it ferments, and im not in love with it here, but this beer is tasty and the yeast is a big part of that, it works well with the lightly flavored pale malt base and the szechuan peppercorns in here, a cool layering of interesting flavors that all correlate well with spring. great complexity here, the white wine notes of the yeast and some green pear from it too, estery and a little belgian tasting to me, followed by a wonderful floral profile, elderflower bitterness, the medicinal szechuan, and a polleny almost dandelion element, springy indeed. a crackery pils type grain note, a dab of honey without being sweet, and a little sharp citrus sensation at the end, a fantastic flavor journey really and quite unique. the thing that gets me here though is how strong this is, you would never know from drinking it that it was north of 9% abv, that seems insane to me for how delicate this feels. be careful! a really smart beer and a new context for this yeast that i really like. well done again by lowdown, some of the most underrated beers in the city here, not to mention their pizza...
