insanely old i think, based on where it was found and the fact that i have not seen anything from these guys for sale anywhere in as long as i can remember, it also certainly looks, smells, and tastes pretty dated, although still a cool beer with some redeemable value and appealing uniqueness, just would have loved to try this in its prime, full of promise, but i love getting into beers that time forgot too, and this was fun to share with a long lost friend. still an inch of white head on it, creamy and thick, almost nitro looking, but the base beer us murky even before the bottom inch, greyish tinted weirdly enough, real pale, and with some wheaty density despite being effervescent. the nose and taste throw huge oxidation, a touch of sulfur, green pear and apple, white pepper and allspice, bigtime grain fade, esters receding but some white wine, dried lemon peel, and dust. its oddly earthy and balanced, still intriguing, unique even, i bet this yeast was wonderful years ago. its very light still too, fluffy and sort of creamy but minimal, fast finishing, and spicy. hope to one day get to this fresh, its not quite wild or bretty, and its certainly not infected, but its not what it once was on the ferment i assume. cool stuff though, glad i took the chance on it. dont think i had heard of this brewery before this one...

500ml bottle, no dating.
I removed the cap and it wanted to gush but nay, I say. That was temporary.
It pours a lightly hazy straw gold with a fluffy head of foam.
Smell is very spicy. Fennel, pepper, light clove, very earthy, hints of tartness but that may be from the spicing.
Fennel and very peppery taste, dry, earthy, again, hints of tartness. Unusual flavours here and it takes some getting used to.
Medium body with lively carbonation, especially on the back of the throat.
Lots of sediment in the last pour, it’s bottle conditioned. Once that was in my glass, I think I enjoyed it more.
Worth trying.

The smell is great, real saison like peppery and herbal but the taste doesn't follows, it's too much on the grain. Where are the spices as advertised ?

From a 500 ml bottle to a tulip. Reviewed from notes dated November 13, 2015.
A-The beer pours hazy, but very light golden in color. A soapy white head starts out tall (almost three fingers) and has good staying power as I drink. A few chunky bubbles keep the head up. Nice looking beer for the style.
S-The aroma is pretty dry and grassy. I sniff some lemon, dried grass or straw, a touch of funk, and some powdery dry yeast. Somewhat herbal overall.
T-The taste is also on the herbal and floral side. Flavors are pretty mild with hints of dried flowers and grass, lemon, and some medicinal notes. Maybe some black pepper in there?
M-This this almost airy. Very light on the palate with an effervescent carbonation.
O-This is a decent saison. It comes from the light and grassy mold instead of the funky/tart mold. Not as complex as the best examples of this style and a bit too light and carbonated, but worth a shot if you are in the mood for a saison and want to break from your usual rotation.

L: no dates on the bottle, label looks new, plain silver crown... liquid is quite clear, mild haze, very pale yellow with green tinge... snow-white foam that disintegrates, becomes spongy-rocky, then all but fizzles, leaving little
S: vibrant aromas... zest of a melange of citrus... soap fragrance, spicy dried flowers... underlying lemon hard candy sort of light sweetness - not an unfamiliar scent, though it makes me wonder how old this bottle is...
T: lemon-lime soda-like flavor dominates, curious herbal bitterness in the finish that's likely from the spices (anise, fennel, pepper), though none of those spices are individually overt... adding the sediment enhances the dimension of its fruitiness... the taste is overall quite bold, despite the beer's inherent delicate construct
F: notably ultra-light on the palate, similar to a flavored soda water (a la Pellegrino, but less carbonated)... big bite on the tip of the tongue, which could be a combo of it's dryness, the yeast, and the peppery spices... glassy smooth viscosity past the sizzle
O: the Pellegrino comparison is the best thing I got here... I feel like the bottle is maybe 6 or more months old... it's fine for what it is, and I would say the addition of the spices are a huge plus for something like this that's not necessarily intended to be aged - it seems it would otherwise be really dull

Pours clear and very light. Very floral and lightly FUNKY AROMA.
