i have long been saying that these guys make really good beer across a bunch of styles and that they are supremely underrated in most circles and conversations. this is awesome saison, i mean, really really good, frankly about as good as domestic clean saison can be, close to technical perfection as far as i am concerned, and a beer that has me wanting to go back for more already. its gorgeous in the teardrop glass they serve it in, especially in the late afternoon light. bright yellow, very pale, off of fully clear but still well refined and delicate looking, holding more than an inch of creamy white head like beaten egg whites, and with lots of carbonation rising up, its absolutely beautiful. the aroma and flavor are simple but right on, yeast driven but not overly so, between french and belgian in its esters, white wine and candy notes, with things like kiwi and white pepper behind it, especially when it warms up, but i hardly let it, as its so refreshing i really almost never set my glass down. a neat noble type hop profile is great with the fruitiness of the yeast, if i was a betting man i would say saaz hops are in here, but it is likely a combination of varietals, even teasing citra with some definite lemon character on the finish with the bitterness. carbonated like champagne and bony dry on the palate, this one really sings, and the wheat and pils malt in the base are light but flavorful and seem incredibly fresh to me. the fermentation is professional and right on, and i could drink this by the gallon, no kidding, especially with the spicy nashville hot chicken drummies they serve in here. not sure ill be able to prevent myself from going back for more later this week. as good as clean saison gets, and maybe the best post beer to date...
