For our seventh anniversary release, VII, we’ve chosen to blend a selection of our favorite barrels, resulting in a final product that’s roughly 75% stout (aged for two years in Woodford Reserve bourbon barrels) and 25% barleywine (aged for six months in Sazerac rye barrels). On top of that, we’ve added two whole pounds of Madagascar vanilla beans per barrel for some additional depth. VII has layers of rich chocolate, caramel, and fig flavors with a smooth, lightly roasted finish and a touch of vanilla. It’s best enjoyed at cellaring temperature, in celebration of a similarly momentous occasion.

Glossy black with a short, fuzzy tan head settling unevenly to a thick bubbly collar.
Smooth and velvety, the chocolatey body expresses a very impressive level of rye woody flavor with a pleasant spicy heat, finishing very dry, exhaling vanilla. I at times get barleywine vibes as it warms, with a little nougat and Rolos, but I just can't get over that rye. It's delectable!

First off, surprised by no head on this. Smell was slightly sweet, coconut, and chocolate. Rye "burn" is present. The mouth feel is gentle, soft, and velvety on the tongue. The flavor is full on: mellow chocolate, coconut, and bourbon with slight molasses. Really enjoyed this special offering at Marino's, 5/29/21 with my sweetie. Hold on to your hat!
