Bottle dated 12/15, enjoyed 05/23. Frigging tasty saison. Classic Austin street style. Not sour or tart, just a little to let you know it's there. Really nice, and nicely aged.

l slight haze pale color appearance faded too fast and no lacing .
Smell is slight sweetness and funk
Taste light tartness but with a strong malt

12.7oz bottle -bottled Dec. 2016 - so this has 2 years on it. Poured into a tulip at 46f.
Pours a deeep glowing opaque apricot orange. Absolutely beautiful color. Like a desert sunset. Violent two finger loud fizzy head dissappears in seconds, leaving a lively, dancing bubbling surface.
Nose it way overripe fruit. Stone fruit. Musty ripe peaches, apricot, papaya, some cantaloupe, very very distinct Brett character. Ripe dark fruits too. Cherry, currant, maybe a touch of blueberry. Honeysuckle apples, honey itself, Some mulling spice hints. It's bretty. Boozy.
Palate is huge brett. More than I've ever gotten before from anything ever at all. This is complex layers on layers on layers. It's ever changing, with a super long finish that transforms wildly. I honestly cannot describe this one. The different flavors cascade down the tongue faster than you can recognize them. Light fruit, Stone fruit, tropical fruit, dark fruit, funk, wood, funk, must, funk, stone fruit, funk fruit, funk, and booze. My god. The aggressive carbonation assists in flashing those different flavors past you so quickly. There is so much flavor going on here and I am actually shocked that this is 5%. I would believe it's between 8 and 10%. In fact, no. I literally do not believe that this can be 5%.
This is wild, and I'm truly sorry that I cannot describe it any better. This is one you need to try to understand.
Mouthfeel is almost violently effervescent. It finishes dry, but it takes an extremely long time to finish. It takes it sweet time showing you every tiny little nuance of the Brett. It's boozy and weighted for its "5%" abv. I really have to believe this is much higher.
Overall, wow. This is a wild, wild ale. A rainbow of flavors. Flavors you didn't know existed. A new flavor altogether. Amazing what some Brettanomyces yeast can do, with just a little bit of food and time. If you like wild and funky, this will not disappoint you.
