We use our Emily’s Dream series as a playground to explore and expand what a sour can be. For our 3rd Anniversary, we continue the theme of experimentation by brewing a base sour, then doing a secondary fermentation with three different fruits: Lychee, Tangerine, and Dragonfruit. [see what we did there?]
Rather than blending, we kept the three beers separate, so you can explore the unique aspects of what each fruit adds to the beer. There’s a journey in flavor—ranging from bright tartness to lush and tropical—all with the tang and sass you expect from a sour. We hope you enjoy the experience.

Bottled May 2017. 5.5% ABV. As noted above, this is the 'Emily's Dream' with Dragon Fruit.
Poured from 750ml bottle into glass. Clear, pale gold colored body. White, bubbly head quickly dissipates. No lacing.
Aroma is mostly sweet bubblegum, with a faint sour aspect.
Taste expresses more of the sour, dry part of the beer, but sweet bubblegum comes through too.
Medium mouth feel, very low carbonation.
As labeled this is a fruit sour, this example is sweetened by the dragon fruit addition.

#16 - mango and passionfruit.
tiny bit of haze in an otherwise amber beer - no head to speak of. smells tangy like tropical fruit and wild honey. mouth is tart fruit.

This is Emely's Dream #8 which is a grapefruit sour. It pours a nice orange color. There is minimal head. slight grapefruit nose. The taste, as advertised, is grapefruit. It is a bit light feeling, but expected for this type of beer. Not a bad beer to enjoy on a hot Minnesota day.

A local sour for about $10. I'll give it a shot.
Looks nice enough but the aroma leaves something to be desired. Some lactic notes but not a lot of peach or much else on the nose. Enough peach flavor and pleasant enough taste but not terribly dynamic.

Version number 3, red wine barrel-aged sour. One of their better sours. Just a little barrel and red wine character, moderate lactobacillus sourness that reminds me a bit of a Flanders Red.
