Saison de Citron Vert is inspired by margaritas and Mexican lagers 'fully dressed'. The limes are hand peeled, cut, and barrel aged with our 85% white wheat farmhouse hefeweizen base, Blondine. After pressing off the fruit 3 times the beer is blended back together with the zest of the limes and a handful of Fleur de Sel, French salt.

Undated bottle, on shelf in store. Stored at 42 degrees and served at 42 degrees in a hand washed and dried Jester King snifter.
Appearance – 4.
Body – Orange, hazily opaque, effervescent.
Head – Small (Maximum 1.5 cm, controlled center pour), off-white, medium density, average retention, diminishing to a three to four mm ring fed by effervescence, and a thin complete layer.
Lacing – None.
First pour – Light orange, clear.
Aroma – 4 – Surprisingly, an easily detected refreshing lime bouquet.
Flavor – 3.5 - Sour almost to the pucker-point with a bit of salt. The lime-ness is lost in the sourness. No alcohol (6 % ABV), no dimethylsulfide, no diacetyl.
Palate – 3 – Medium, almost sticky, lively carbonation.
Impression and interpretation – 3 - Like a gose. Unfortunately, the sourness overpowers the lime, turning a beer with a high potential for enjoyment into an acetic/lactic mess.

Although the bottle carries the name Saison, the info on the label says, "...we zested and peeled the limes before fermentation with our farmhouse sour Hefeweizen, Blondine. The beer was pressed off thrice to extract the puckeringly citrus flavor of the fruit before adding back the zest and a handful of fleur de Sel French salt."
All the others in this Saison series are listed as a "Saison, Farmhouse Ale", so I did so as well.
Blend #1 bottled in April 2017, popped on 12/3/17
Pours from the 500 ml bottle with a frothy white foam leaping from a golden, slightly cloudy swirl. Clears quickly. Aromas of bright kaffir lime, almost perfumey in the way it bursts from the foam.
Taste luscious, bright lime. But lime with depth. This goes in a key lime direction, floral and full, not pithy at all. Also, a slight yeasty funk peaks through.
Mouthfeel is medium carbonation, lite in the mouth.
