Our wort is soured with five strains of natural, probiotic bacteria that produce pleasantly tart levels of lactic acid. Once the baseline sourness is established, we take the wort through a normal fermentation just like any other beer, and condition this particular one on pineapple puree and dry hop it with Mosaic.

Pours a clear golden yellow with fine, soapy foam.
Smell is sweet and sour with pineapple, lime and a slight floral note.
Taste is tart and a bit creamy. Tastes a lot like youghurt with pineapple and lime, before adding a grapefruity bitterness, and a hint of salt.
Mouthfeel is medium, well carbonated.
Overall, a very nice beer with a nice balance between sour and bitter.

From a 2-week old can, on averagely aggressive pour into a standard tulip. Pours bright cloudy orange (though not as murky as NEIPAs), with 2 fingers of bright white frothy head. Head retention is medium for IPAs, as is the lacing on the glass.. Nose is somewhat weaker than I expected. I can't pick up individual smell notes, but it's sour. Doesn't really smell like an IPA, which is interesting because mosaic is one of the more aromatic hops. Nose follows, kind of. It's really tart, though has a strong hop-heavy mosaic back end. Flavors got a bit weird as the beer warmed, idk if it was more alcohol coming out, or yeast, (I'm really not sure), but overall the beer tasted pretty good. Feel is quite typical, nothing interesting to note. Overall, I liked it. This beer is tart, dry, hoppy, and light enough — everything what you expect from a sour IPA. Though honestly it would be possible to execute it even better, and at $5/can, I'm not sure I would spend the money again.

Thanks to eyebereej for sending this one! Reviewed from notes. Poured from a 16 oz. can into a J. Wakefield OG teku glass.
A: Pours a light gold that's nearly crystal clear - just a touch of chill haze. Forms a 1 1/2 finger tall white head with good retention despite a relatively low level of visible carbonation.
S: Light lactic tart and fruit – pineapple, tropical fruits, and citrus rind hops. Light cracker malts that have a mild grainy character. Some lemony citric acid, and a touch of fleshy apple or pear as well. Overall, it's fruity but not particularly sweet thanks to the hoppy and tart aromas.
T: Lactic tartness, citric acid and acidic pineapple up front. Citrus rind bitterness, and some grassy and a bigger weedy dank flavors as well. Cracker malts add a bit of sweetness, then some more juicy pineapple with accompanying tart citric acid. It's dryingly tart with residual fruitiness in the hang.
M: A light body, with relatively low carbonation sensation and low alcohol.
O: A bit of a different beer, but overall I enjoyed it. It strikes a nice balance between the sour and the fruit and the hops, and the pineapple was present throughout without obliterating the other flavors. The low carbonation (both visually and in the mouthfeel) hurt the beer a bit I think. But overall this was pretty tasty.

Very unique beer. Initially starts sweet; nice pineapple flavor. It then turns into more of a sour. Never had a beer like this. Very interesting. Good beer too!
