Our wort is soured with five strains of natural, probiotic bacteria that produce pleasantly tart levels of lactic acid. Once the baseline sourness is established, we take the wort through a normal fermentation just like any other beer, and condition this particular one on boysenberry puree.

16oz can thanks Rick. Pink/purple color, kind of bright, small pink head.Light fruity aroma, berries, a little funk. Taste brings more fruitiness, a mild pucker, and a little tang.

Thanks to eyebereej for sending this one! Reviewed from notes. Poured from a 16 oz. can into an El Catador Barrel-Aged glass.
A: Hazy pinkish purple, with a good amount of visible carbonation. Forms a big, three-finger light pink head that fades away relatively quickly.
S: Light lactic tart, tart underripe berry, and cracker malts. The boysenberry comes across like a tart mix of blackberry and raspberry on the nose. Just a mild cheesy funk, as well as some citric acidity. Intriguing enough.
T: Tart underripe blackberries (i.e., boysenberries) and lactic tartness up front. A mild cheesy and feety funk again. Pale cracker and two-row malt body. More acidic berries and somewhat lemony citric acid. More underripe blackberries in the hang, and ends up fairly dry.
M: A light body, bordering on watery. Crackly fizzy carbonation sensation, and low if any alcohol.
O: Enjoyable enough. I think it suffers some from the “session” nature of the whole affair. The body is so light that it’s a little distracting. I wish the berries had more fruitiness, or there was more funk, or something. It’s more acidic than expected, without much else to balance it. And again, it’s fairly thin. But, it's still good enough that I’d certainly buy a few cans if it were on the shelf around here.
