This is an Extra Pale Ale that was primary fermented on a moderate (for our standards) dry hop load that consisted of Nelson, Vic Secret & Galaxy hops. With the assistance of an enzyme, our neutral California Ale yeast went to work, fermenting away sugars while also performing the biotransformation of hop oils. Without getting too scientific (because it's quite the rabbit hole), the result is a profound increase in hop flavor. The affect caught us by surprise, especially how much flavor can be extracted brewing this way while still maintain bold, intense aromatics. We used 100% low kilned Pilsner malt to achieve a super pale yellow, straw-like color with brilliant clarity.

Pours a thin straw yellow color with a soapy white head and medium lacing. This looks thin. My wife askede if I was drinking a Heineken.
The smell does not match the look. It's orange and ripe pineapple with sweet undertones.
The taste is much thinner than the smell - more in line with the looks. It has a thin tropical note with stronger floral notes and a lingering earthy finish.
The mouth feel is a bit thin with high carbonation.
Overall this is easy to drink, with a nice nose and decent flavor.
