Imperial Stout with Maple Syrup & Pecans
To convey as much maple character as possible in this batch without making it cloying and syrupy, we dialed back the sweetness to preserve balance and drinkability. It's definitely more of an Imperial Stout and less of the pastry varietal, as intended - and we love how it turned out! And while sitting at 11% alc by vol, the result is dangerously smooth and comforting. You'll find pecan notes mid palate, which are admittedly subtle (nuts are tough to extract heaps of flavor from) but provide a nice contrast with the decadent maple-forward arrangement. You'll still find plenty of roast from the malt bill and some countering bitterness...STOUT LOVERS REJOICE!!!

10W-40, as the date stamp says. Canned in January and enjoyed in March, 2021.

The beer opens as it warms. At first, not long out of the cooler, it’s muted, but slowly the pecan and vanilla notes come across on the nose. Likewise, each sip has a balanced sweetness to it, as the maple syrup shines here. Only after fully warming does a boozy note step forward, by then reminding you of its 11% strength. Thick, rich, luscious, decadent.
