Barrel Aged Wild Ale w/ Flame Raisins
In late 2019 we blended together a one-year-old, spontaneously fermented, beer with a barleywine-inspired wild ale that had fermented and aged upon California Flame raisins for nine months. This blend was allowed to undergo a secondary fermentation, in barrel, marrying the two beers over the course of seventeen months before being laid to rest in bottles. The resulting beer, more akin to fortified wine in its profile, was packaged still and offers notes of brown sugar, late harvest grape, luxardo cherry, and cassis.

A still barleywine hybrid blended with a barrel aged wild ale. From the bottle this pours a malty, ruddy reddish-tinged brown. No bubbles. I liken the experience of drinking this as similar to something I’d get from a glass of wine. Tannic notes, some astringency, long finish. The conventional barleywine characteristics—the rich, malty character, the plum and leather—play backup to some of the more floral and funky expressionistic aspects of the barrel blend. At first it put me off, but it came to grow on me sip by sip.

Bottle from the ASB Bistro in Carmel, CA. Pours an opaque very dark amber with no head, no lacing, smell is sour and funky dark honey, creme brûlée, molasses, box of raisins, apple cider vinegar, hints of woody bourbon and BBQ sauce, taste follows with mildly sour and sweet red wine, red wine tannins, plum skin, dark cherry flesh, frutti di bosco juice, hints of overripe strawberries, red wine soaked apples, and raisins, feel is full bodied, no carbonation, mild acidity. The most wine like beer I have ever had and it has a great balance of sour, funky, sweet, and fruity. Yum.
