Inspired by the rich and complex tradition of mole, we built a blend of imperial stouts aged in bour.bon barrels for 11-26 months and conditioned that upon Ecuadorian cacao nibs, chile de arbol, black peppercorn, cinnamon sticks, allspice, clove, and sesame seeds. The resulting beer presents a robust experience, balancing the melange of spices with a deep, savory richness, soft bour.bon spirit, and a warming heat that excites the palate!

On tap at Alvarado Street Brewery's production taproom in Salinas
A: Pours basically black with a frothy dark khaki head that settles to a thin layer and leaves a little spotty lacing.
S: Roasty toasty, earthy Chile, sesame umami, chocolate, smooth bourbon, brown sugar and vanilla, allspice, clove, and cinnamon.
T: Super complex, milk chocolate, brown sugar, smooth bourbon, vanilla, allspice, clove, and cinnamon, suddenly hit with a wave of arbol Chile and peppery spice, roasty toasty, a touch earthy, with a little sesame on the back end.
M: Full body, mild carbonation, noticable but not unpleasant warmth from the chiles.
O: Saw they were pulling this keg out of the cellar this weekend and conveniently found an excuse to be in the neighborhood and try it. Glad I did to say the least. This one is absolutely wild. Massively complex, all the flavors come together beautifully, plus you get the peppery heat to add to the experience. It's early in 2024, but it's gonna take some doing to top this as the best beer I have this year.
