Mai Tai P.A. is our flagship. Our ride or die. The liquid expression of an obsession with Mosaic hops. After medaling at the 2024 World Beer Cup (its sixth medal at a major beer competition) we decided to take things to the next level. This isn’t just a Double Dry Hopped version of Mai Tai, this is a small batch attempt at Mai Tai perfection. Yes, the layers of Mosaic driven flavor are exquisite (thanks to several well timed additions of high quality lupulin), but we didn’t stop there. We worked hard to elevate everything: the quality of the bitterness, the color, the clarity, the foam, the mouthfeel… The result? Well, to be honest, we wanted to keep it all for ourselves. But don’t worry, we are happy to spread this GOLD around.

From the can this pours true to style. Looks great!
There’s a light, yes, tropical nose on the nose and sip. It’s consistent with the Mai Tai family, only a little lighter and with a delicate touch on the finish.

Can poured into an Alvarado Street Brewery Willi Beecher glass
A: Pours faintly hazy golden yellow with a frothy off white head that settles to a firm layer and laces beautifully.
S: Fresh citrus, grassy slightly herbal notes, pine, light tropical and stone fruit, a bit floral, biscuity slightly bready malt, and a touch of caramel honey sweetness.
T: Citrus, lemon, lime, and light tangerine, floral notes, tropical and stone fruit, apricot, blueberry, passion fruit, papaya, and melon, resinous pine, grassy subtly herbal tones, biscuity slightly bready malt, and a touch of caramel honey sweetness.
M: Medium body, mild to moderate carbonation, soft on the palate, crisp up front and somewhat creamy on the back end.
O: I'm a big fan of OG Mai Tai and love seeing all the cool variants they put out there. I think I can tell what they were going for here, but dare I say I think they softened it a bit too much. It's still delightful, but things don't quite pop as clearly as they do in the original. Not sure if there's an IBU difference between this and the OG, (feels like there is) but I think adding a few more back, giving it just a bit more bite, when combined with this super smooth malt bill, would make it pretty much perfect.

Sweet tropical hoppy, a hint of blueberries, and a Mosaic-dank nose on this one! Taste follows with a Mosaic hoppy, and a crisp, piney-dank bitter finish. This is good! The only slight drawbacks are that it is not as clean and snappy on the palate IMO. Still enjoyable to drink and a good representation of an all-Mosaic westie! Pretty tasty!
