Forest and Marz is a collaboration with Forest and Main.
This beer is a 4.7% saison that was aged in oak barrels for a year then conditioned in bottle for an additional 6 months. It features house Brett cultures from both breweries. The beer lends ultra tropical Brett character and heavy notes of stone fruits. The beer finishes dry and tart across the palate. A lovely saison reminiscent of warmer weather, fancy cheese plates, and social interaction.

Pale gold, some random carb visible, compact layer of foam.
Delicate and complex aroma, lemon, tropical fruit, brie rind, wet hay, oak.
Tart and light bodied, lemony, oaky, white grape, finely textured and dry.
Slightly spritzy carbonation, enough to scrub the palate.
Overall this is nice, not overly sour and easy to drink.

Bought at The Beer Temple.
Only my 4th in this new category, I clearly am Brett-shy. Yet for those who like Brett, this is worth the try and might even be a good value... albeit a been too dear on that curve for me. I also am saison-silly; meaning I love them (they are my largest category by double the #2.) But I only tolerate a little brett in saisons. So as a saison purist, I agree with BA in opening-up the Brett style.
Forest opens average, decent foam; but all activity seems to go away, leaving a dishwater blonde. Smells are heavy on the horsey; but that's what the devotees want. Tastes are balanced; the fruit is tarted-up by the Brett. True to style, Forest is dry in the finish and the mouth is medium. More bubbles would be nice, but that would be the exception to the style.
My 7th from Marz, I have not tried as many of their brews as I should have; given they are now seven years old and helping transform an old industrial neighborhood. They have figured out the diverse nexus of beer culture, art culture, post-industrial culture and have an exceptional website to prove it. Not only did they move their production facilities across Ye Old Bubbly Creek (of slaughterhouse yore), but they also opened a fancy taproom in Logan Square. And for all that, I give them some pretty good OA Hugs.
