Bottle dated 5/31/17. Pours a clear gloden yellow with a huge fluffy white head. Nose is citrus, grapes and yeast. Taste of grape skins and citrus pith along with dry oak. Nice yeast profile and fairly tart. Medium bodied with good carbonation. Very dry tart finish.

750 mL bottle. Clear golden. Big white head. Smells of citrus, grapes, yeast, and a little acidity. Tastes lightly tart. Strong grape flavor. Fruity and juicy. Oak. Yeasty finish. Back end hits the sinuses a little bit. Soft carbonation. Medium light body. I'm not really a fan of hopped sours, but this is pretty tasty.

750ml cork and caged bottle. 75% Galaxy, 25% Nelson stated on the back, dated 5/31/2017. Served in a Casey stemmed glass.

Pours a slightly cloudy medium yellow body, one finger white head, good retention and tons of lacing. Smell is rich grapefruit, a bit of tropical fruit and grass, not as much spice I expected from the Nelson addition, but still super grassy and grapefruit-forward from the dry-hopping. A bit of lemon and leather, light grainy sweetness rounds it out. So crisp and aromatic. Flavour is a crisp tropical fruit and grapefruit aromatic flavour that dances on the palate, with a little grassiness on the backend, touch of spice and lemon but it's definitely predominantly Galaxy here. That Casey house minerality, mild-moderate acetic acidity, light lemon and trace funk. Not a particularly funky beer but complex and tasty. Mouthfeel is medium bodied, light dry lemon and grapefruit on the backend, good carbonation, touch of leather lingering after the fact. Wonderful dry-hopped saison; I really think the dry-hopping accentuates the best parts of what the house yeast produces. I have yet to find a dry-hopped Casey beer that I did not enjoy.
