For this Mix, we took a couple barrels of Saison and aged them on fresh, whole organic Palisade peaches and nectarines at a rate of 4 pounds per gallon. The small genetic difference between peaches and nectarines is a recessive gene, hence the name. We’ve been aging this blend for over 4 months, waiting for the stone fruit juiciness to pop out of the bottle. The time is now.

it seems like the rate of new casey beers has increased lately, and i think thats awesome. this one has peaches and nectarines in it, built on a saison base, not super mature, the fruit is insane on this, cool to have one on tap, i feel like i rarely see their beers in draft format! the fruit is insane, i somehow, crazy as it sounds, both smell and taste specifically peaches and nectarines, i know it sounds wild, but its true, sweeter, fleshy, dripping yellow peach and tangier, tighter, succulent nectarine, both are here, and the high level sourness of the beer seems to bring out the best of both. seems to be a bit more acidic than a lot of their beers are, but its also really woody and balanced by quite a bit of character still from the wheat malt. the aroma is the best part, i get more bretty funk and more of the original saison character in it, the subtlety is there, even though its still so fruit driven. the flavor is a little more straight ahead, but i am not complaining. more carbonation and a little less overt sourness i think would improve this, i wouldnt necessarily want to drink a whole bottle of this by myself, but as an expression of these fruits, especially side by side, this is next level. casey beers never disappoint!
