Spelt Farmhouse Ale with Apricots
On top of COVID, this dumpster fire of a year wreaked havoc on the fruit in Colorado. We we able to seek out 300 pounds of apricots from a grower in Paonia, Colorado. We selected a barrel of a new spelt farmhouse beer we're working on and added a bit of Funky Blender to round it out. We fermented 150 pounds of these apricots in a neutral french oak barrel like it was 2015. The result is bright apricot, sweet tart acidity and Saison-like aromas.

This one pours a hazy golden yellow color, with a small head, and not much lacing.
This smells quite acidic, with a big apricot aroma, and lots of white wine.
This is perhaps a bit too acidic to be my absolute favorite Casey beer ever, but the apricot is just done so well here - fleshy, juicy, and super funky. I wish whatever base saison is here was a bit more present, as I just get a juicy stone-fruit like funk here.
This is medium bodied, extremely acidic, which lingers on the palate for a while afterwards. It's still decently drinkable.
Some of the recent Casey beers have been creeping towards acid town a bit - they're still tasty, but I hope that changes and is dialed back a little bit.
