I bought two Off Script from Beer Drop. I'm glad I drank the second as it changed my review. To me, it probably is not even a good idea to go off-script from most Bavarian styles because they are so rigorous. FBC claims to make minor changes from the classical pils, but this copy of Off Script is more off-script than it claims.
Off Script Looks average, probably too blonde and almost no lasting foam. Smells are faint malts/biscuit also average. Tastes improve, primarily for the 35 IBU claimed to be in this. I get the dry sensation claimed for the finish, but it's more marketing than real. Feel is decent to wash down a below average lunch; but not enough to quench a thirst with substance.
I do give good Overall Hugs to Fiction Beer because it does help center an improving neighborhood. And I very much like Denver's brewing scene and how it is fast making Denver a cool place to live (or in my case, visit.) The concept behind Fiction also is good, to be inspired by literature and carry that through to the taproom. And it carried to the thoughtful script on this can of Off Script. But this pils... something Happened To It On The Way To The Forum.
4/16/23 Finally had the second can and improved my rating and edited out the excesses of my above review. I also paired Off Script with cheese tacos and hot sauce. The sauce made my forget about the beer's not-so-good experiment. I'm glad I drank this second can to rectify my review above.

I love Pilseners. I would even say they're one of my favorite beer styles. In my opinion, this is the best one I've ever tried. My other favorites are Highwayman, Scrimshaw and Prima. They call this Off Script because it's super dry, which is supposed to be different from the normal style? The only pilsners I've had that weren't extremely dry were Lagunitas' PILS and Propaganda by Berryessa Brewing Co.
Poured from a pint can into a flute, the transparent straw yellow body produces a profusion of white head with a level of retention that no light beer is rightfully entitled to. It leaves quite a lacing pattern as well, reminiscent of sea foam.
What lovely array of aromas to enjoy; including hay, honeysuckle, jasmine, dandelion, cut grass, oats, pizza dough, white pepper, and honeydew melon. Mouthwatering.
So refreshing. A true comfort beer. Bready, fresh, floral, just a hint of sweetness, and even less bitterness. I don't think I'd ever get tired of drinking these.
So crisp. Beautiful light texture, smooth middle, and that finish! So crisp.
To put it simply, this Pils combines the light mouthfeel and mellow flavor from North Coast's classic with the aromatic floral hop notes and dry finish of Victory's brilliant innovative brew to create a beautiful hybrid that is undeniably tastier than either of its influences. Highwayman is almost as good, but this one has a little more substance, which I find preferable. Prost!
