pink and pretty and soft and only a little bit tart, this is a cool beer, particularly ambitious it seems for a little known brewer in eastern nebraska (not that regionality has anything to do necessarily with innovation, but you dont hear a lot about beer evolution in this area). its a witbier first, and i like that, subtle pink tangy cherries enter the mix in the aroma, but are a little more juicy and sweet in the taste. nice with the floral and spicy belgian yeast for both senses. the tartness i think has to come from a front end process, a little kettle souring, but it doesnt seem like the whole thing underwent that transformation, as the acidity is mild, just puckery enough to compliment the cherries without being so acidic that you wouldnt want to drink this by the pint. nicely restrained there. an enjoyable light fruitiness in the yeast as well works with the cherry, and there is a pleasant airy creamy feel to the whole thing that makes it tremendously satisfying. not many sours have this aspect working in this way. cool beer from a cool brewery. nice execution on a good idea.
