Served in a snifter at the tap room, looks deep dark blackish reddish cherry with a 1/2 finger white crown and good lacing. Nose is surprisingly rich, even if it isn't all that big...cherry skin, a promise of some soured wheat and orchard fruit. When this hits the tongue, you've got something good. Definitely some substantial fleshy cherry, and the advertised persimmon makes a lot of sense...kind of a date-like rich sweetness, with a little spicy liveliness that really prickles the tongue and sends you off to the end, which is a really rich toasty and grainy warmth. Just a little sour, but that's okay...this is well made and an interesting and rewarding mouthful. Middling carb, substantial body for the style.
