not being super familiar with the base beer, its hard to really say how different the barrel fermented edition of it is, but its not hard to see what the time in oak has contributed. this is mellow in its tartness, grounded with the wood flavor throughout, and rather complex in its mix of fermenting agents it would seem, with some citrusy bacterial sourness but also rather developed bretty wildness, but also with some french type saison yeast happening here too, giving it a white wine vibe, quite complex and distinctive blend here. the beer is sunny colored, orange tainted golden, and very lively from the tap. piquant citrus like kumquat or something right away, white wine grapes and sharpness, oak roundness and light sweetness, cut flowers, mild apricot, and the wheat. neat array of flavors, suggestions, and essences coming together, and just a really good wild saison, better than the field for sure, and yet another funky beer from fair state that stands out as memorable. these guys are absolutely killing it right now!
