Willet bourbon barrel-aged imperial stout with Tahitian & Madagascar vanilla beans and pecan. Conspicuously ruthless and uncivilized. Born not from malice, but rather karma, generosity, and camaraderie. These are the motives that lie beneath and embody the soul of savage.

Bottled on 7/27/2021; consumed on 3/16/2023
Pours a slick, motor-oil hue topped with a finger and a half of creamy, khaki-colored foam; decent head retention leaves a half-finger of fizzy cap, a lush, moderate collar, and no lacing holding to the walls of the glass.
Aromas of lush vanilla expand to melted marshmallow against sweet pecan as a touch of burnt sugar melds for a cumulative Pecan Sandie inflection lingering over the bouquet.
Taste brings sweet pecan and lush vanilla wafer upfront, with a steady chocolate roast over the mid-palate as overarching tones of Cocoa Krispies paired with oak edges meander through the back end.
Mouthfeel shows a medium body and moderate spritz of fuzzy carbonation settling to a slick, semi-creamy texture; taut drying over the mid-palate is accented with a steady roast through the finish.
Sweet, rich, and unobtrusive, this potently adjuncted stout finds respectable balance between overarching sweetness and supportive roast; a higher-grade, mor considerate take on the barrel-aged sweet stout.

Bottle. Tan head that fades. Black color.
Lots of vanilla. The pecans probably show more. Chocolate, fudge, oak, barrels. Lots of whiskey/rye spice. Smooth, warming, flavorful. Sweetness from the vanilla. Fudge brownies. Probably my favorite barreled souls bottle.

Bottle two was a gusher. Matte black with a faint plum hue. Dark mocha head that quickly settles into a thick crown.
Great dark aroma with chocolate, roast, tobacco and plum. Heavy barrel presence. Strong vanilla and marshmallow.
Some great, dark flavors in the taste. Bitter chocolate, tobacco, plum, wood. Plenty of alcohol heat. Strong vanilla in the finish. Bitter chocolate and bourbon linger in the aftertaste. I don’t think I would have picked out the pecans blind, but they do seem to round off the edges of the beer a bit and add what I initially perceived as a woody impression; there’s definitely a discernible nuttiness as you sip it.
Thick, creamy feel with strong fizz cutting through. Hearty enough to stand up to the intense, layered flavors. Just touch over carbonated.
Aside from the gushing, a truly excellent beer.
