Sampling a cellar temp 500 ml bottle poured into my snifter. Bottled on 2/10/2021, picked up at brewery in October 2021 and been in my cellar since.
Beer pours a rich clear mahogany color with some deep garnet highlights and fluffy beige head of 3.5 cm foaming up and almost topping my glass. Very active carbonation streams rise to the surface of my glass.
Aroma is rich with caramel and toffee and sweet bourbon notes. I also get brown sugar and hints of fusol booze, but no hops anywhere on this beer nose. Definitely malt forward and dangerously not boozy for 17%!
first sip reveals a medium body with slightly syrupy texture and soft fine carbonation. The beer drinks pretty easy for a bigger beer and also doesnt feel thin due to the higher ABV.
Flavor is sweet malt with toffee and brown sugar mixing with notes of bourbon. There is a little bit of pepper booze on the finish and some vanilla and general barrel character. Still no hint of hops. Here I realize that this is a bigger ABV brew.
I really enjoy this beer, but definitely feel the effects towards the end of my glass, and I spread it out over two hours!
Another win for Barreled Souls, I would love to have another bottle of this one, as I am really enjoying all components of the beer.

Pours a crystal-clear deep maroon varnished body with sharper ruby accents and topped with a short-lived finger and a half of sudsy, uniform, dingy white foam; a clean surface is almost entirely void of cap, though does sport a visible effervescence along with a thin, frothy collar, while no lacing holds to the walls of the glass.

Aromas highlight immediate impressions of burnt honey into toasted graham cracker as rich caramel builds to a massive oak bourbon undertone as sweeter toffee, brûléed sugar, and touches of vanilla line the outer aspects of the bouquet.

Taste opens to walnuts doused in a burnt sugar reduction finding heavily toasted honey and a graham cracker mid-palate, giving way to a distinct, underlying floral hint preceding a burly, oaky char; vanilla fuses over time to lingering bourbon on the back end while notes of baked honeycomb fade through the finish.

Mouthfeel offers a medium body with minimal carbonation, with a syrupy slickness remaining smooth and carrying extensive warmth over the mid-palate and beyond; slightly charry textures on the back end finally cede to a boozy prickle on the fuller-bodied finish.

A rich dessert of a brew, the hefty ABV carrying waves of residual sugars counterbalanced by a strong bourbon presence; a true sipper unencumbered by its weight and comfortably embracing the sweetness of the style and the barrels that temper it.
