A voluminous late to develop froth... Modest retention... The color is a muted honey gold... Complex nose... The white wine barrels are at the forefront... Followed by hops, funk and traditional Saison earthiness... The palate is equally complex, but the flavors aren't as pronounced as the aroma... On the lighter side of medium bodied... Lots of bubbly carbonation... Semi-dry finish... Overall an interesting and unique Saison... Lots of depth and character... There is plenty of good stuff happening here, just wished the flavors were a bit more pronounced and the mouthfeel was a bit heartier... Those two items keep this from being a truly world class creation...

Another review backlogged from the July 2016 trip to San Diego/Mexico. This is the first review of this beer on BA.

This is a spelt saison. Spelt is a grain similar to wheat. Pours yellow, beautiful 3/4" white head on it. Nice clarity as well. Aroma is multi layered, hay, average brett touch, french oak, white wine, green grape, green apple, wet hay and clay.

Taste is nice, the French hops offer a bitterness without amped up grapefruit notes turning this into a saison ipa or anything, french oak just keeps banging away on the palate. Above average sourness, especially for a saison. I don't want to say its complex because its pretty traditional, the French hops are neat, but they are pretty similar to a lot of mild existing ones on the market for years. Ultimately, its the saison like stuff that makes this saison a good one if you know what I mean. Lots of lemon, hay and french oak to this one and its quite enjoyable in that regard.

Bottle. Poured out a slightly hazy, golden yellow color with a small, cream-colored head of foam. It smelled of yeastiness, fruitiness and toasted caramel. Sweet caramel and stone fruit with a spicy/yeasty quality.
