Poured at fridge temp. Pours an opaque yellow/orange with minimal head. The nose is lemon and sour patch kids. The taste is insane. VERY sour. Like warheads. Not really sweet. Crazy how sour this is. It kind of kills any other flavors.

Lightly foggy burnt gold to tawny brown, while persistently bubbly within, its short khaki head dies quickly.
The medium body is effervescent but has a filling round firmness to it, exploding on the palate with tart citrus leaning towards key lime and juicy calamansi. Bright ribbons of subtle young oak perfectly compliment this, before coming into a fine, semi-dry finish bringing up hints of peachy apple.
Both the funk and sourness are moderate and pleasant, while delicate accents of wildflower and passion fruit arise at times in a quite unique way. As it warms, it develops a just faintly funky nuttiness.

Not a traditional saison due to the moderate acidity and lack of yeast but it is bright and tart with a lot of white grape characteristics. It's definitely an interesting beer.

It's been some time since I've written a review. Felt the need to review this nightmare. This is shades of Bruery Grand Funk Ale Road. No complexity, nothing but ammonia and enamel stripping acidity. To call this a Saison is laughable. I need to just sigh and realize this is what Funk Factory does.... It's for some people but it's not for me. Godspeed.

An interesting contribution to the Saison style.... but I'm not sure how good it is for the style to get this far-stretched into tart territory. True, the saison style invites innovation. But today's tart trend often has been particularly unwelcome to me, being a traditionalist. Funk Factory's innovation here is that a geuze-like quality can be managed. Today, too many micros go too tart to hide their inexperience.
Quite wine-like from the barrel-aging and a shot of lime in the nose, this finishes bone dry; a geuze-like journey. Refreshing after a bike ride, I also started the meal with Danish... but went and fetched a more suitable saison for the table.
While I found this on the remainder rack at Woodman's Kenosha, I think this would be worth aging. But no matter now, it was enjoyed today to refresh and will be tomorrow as well.
I went on Funk Factory's website and it was down; so no brewer review. But maybe I should visit Funk Factory in Madison as I lived several blocks from it... 44 years ago as a grad student !
10/10/22 Saw another copy aging on the remainder shelf at Woodman's Kenosha. And in a lapse of memory, bought it. I've edited the above review, but changed the rating a little. I lowered the Overall .5 because I'm less likely to save the balance of this copy for tomorrow because it really is too tart for food. I also went on Funk's website; but it still is too tart. I'd like to know more about them. On the plus side, they sell in their taproom lots of Untitled Art's wares and a few guest brewers... which shows good collaborative instincts, like Danish American "Saison."

Cloudy orange boy with no head. Smell has sour peach, candied orange, minerals, oak, barley, hay, and lemon. Taste is much the same, throw in some leather, brett, apricot and yeast. Light and springy amongst the sour feel, slightly acidic. Get the feeling this would age lovely cutting the giant sour a bit and bringing out the more subtle minerals and fruit.

On draft at Funk Factory. Light hazy golden body, one finger white head. Smell is mineral, a bit of leather, mild-moderate acetic acidity, touch of leather. Nice complexity to it, although fairly acidic. Oak. Brett. Flavour follows the nose, fairly acetic, light oak, a bit of minerality, leather. Medium lighter bodied, decent carbonation, a bit prickly, moderately acetic for my tastes.
