Heritage Wheat Saison Aged in Oak Brewed with NYS-grown Red Fife Wheat from Gianforte Farm (Cazenovia, NY)
This beer is brewed with heritage Red Fife wheat, a robust, flavorful variety that nearly went extinct in the 20th century, due to the move towards easier to grow, more disease-resistant varieties as bread making became heavily industrialized. Fortunately, demand has returned due to renewed interest in artisanal baking and brewing (even before the pandemic, ok?). NYC Grains Project helped source this wheat for us. Without their help and Gianforte's commitment to organic farming, this beer would not be what it is.
Dictator is a mainstay in our saison portfolio and takes 10 to 12 months to produce start to finish. It spends 6 of those months in wine barrels, followed by a minimum of another 3 months bottle conditioning. More tart than Passing Time and Wandering Bine, Dictator boasts big wine-like aromas and stone fruit flavors. Sour beer lovers will appreciate this one.

Hazy, golden color. Nice, white head. Funky, barnyard aroma with some minerals and wheat malt. Light sourness in semidry, yeasty taste. Good quality saison.

Bottle from the brewery in Brooklyn. Pours a clear light amber/ hay color with a finger of dense head that lingers, nice lacing, smell is funky and grassy lemon/lime soda, white grape must, crisp and sour green apple flesh, hints of wheat, bready/doughy malts, and floral honey, taste is funky and floral white wine must, tart apple pomace, mild lemon zest and rose water, hints of pollen and dry oak, feel is light, bright carbonation, dry finish, low to medium acidity. A lovely floral and fruity saison with nice wine and funk character.

Cloudy, golden color with a semi-dense, one-finger head. Head retention is minimal.
Heavy yeast aromas followed by subtle orange rind and honey(?).
Mouth feel is slightly oily, more slick, but wonderful. The beer stays around in your mouth, causing slight salivation, but makes you want to take another sip. Even, persistent, and bright effervescence.
Yeast is subdued in the mouth, and the beer is very drinkable. More tart than sour but not overwhelming. More subdued spice than others have experienced, but the flavor is complex with citrus, pepper, and granny smith apples coming through. Great beer, overall.

this is aged in oak, which may or may not differ from whats listed as a barrel aged version, and i cant honestly say which one i had here, it didnt specify, but it was bottled, and the label says oak, no clue. world class saison here though, this is what i have liked the most from threes so far, and a bottle well worth its asking price. this is way cool, woody and funky and interesting, but also subtle in the right ways that make it drinkable and even almost chuggable, something high volume about it despite its intensive creation process and relative rarity, like i just want to keep pounding on this. the scenery of new york city in winter from a high rooftop on a clear night with close friends and kin didnt hurt my appreciation of this, but it could stand on the saddest of days with techno music and a broken heart, or whatever else you think might suck, but this beer sings, and on matter what your circumstance, this is a highlight. there is some tartness here, a french saison white wine thing, some pucker too, fresh lemon and an herbal tea vibe, wheaty as can be, full in body from it too, and with high minerality and a soft round texture, some funk here too, but not mature enough to be way complex, it just sort of sips and lingers, even though its dry. great carbonation, bold but delicate too, and with a neat oak character. all beer should be this good, i just wish it was cheaper and more readily available, i cant get enough. set and setting are everything, but this is great beer no matter what...

The aroma hits of wheat ,heavy spice, white pepper.
The flavor follows with dense clove, lots of orange, a sweet grainy malt covered up with some gentle wheat. A delectable farmhouse.

Aroma of chalky yeast, citrus pith, and cheese rind with very little malt making its way through. The flavor offers more malt, but not much, and some more yeasty phenolics. It's crisp and peppery with a subtle tart-fruit edge. Medium-light in body and crisply effervescent. Enjoyable and refreshing, stimulating even.
