hazy, amber color. Medium-sized, white head.Herbs, flowers, fruits and caramel, and malt in a slightly funky aroma. Moderately sweet taste with a hint of tartness.

This saison definitely showcases the honey it contains, both in the aroma but also in the taste. The honey does not make the beer sweet however, which is a plus.

Bought at their store in the new Moynihan Train station attached to Penn. My first saison from these lager and IPA makers. Based on Incredulous, Threes Brewing clearly understands the style... despite it not being much of a money-maker for them.
Incredulous is yeasty and has a balanced farmhouse funk. I'm guessing that the oak barrel aging took the edge off the funk and makes it a good table ale. (I only ate bread with it, but that indicates a lot in my book.) The buckwheat honey is a heavy additive, but also works to moderate the funk. And thanks for keeping the biere de Miel alive, since Belgium seems to be neglecting it in recent years.
Threes Brewing deserves an add-on to my micro-review from my previous review. They are helping revive Gowanus for ten years, a former industrial backwater to New York's port that has seen significant regeneration in this Century. Threes also is an important part in elevating New York's brewing culture, which historically has lagged despite the metro being preeminent in North America's culture. So I'm glad to give them high Overall Hugs.

Light, not over sweet and not hoppy.
