Collaboration between Brasserie Cantillon and Domaine Stéphane Tissot. Blend of Trousseau and Poulsard grape marc, macerated for 3 months in an amphora with two-year-old lambic.

150ml pour from a 2025 keg at Zwanze Day hosted at Moeder Fontainas. Review entered from notes.

Very clear, light pink, no head. Smell is mild, nectarines and peach juice. Something on the cooked side. Light red wine, rose maybe. Taste is mildly acidic, rose and diluted strawberry. Mouthfeel is thin, light, dry. Good. Not great by Cantillon standards if you ask me.

Cellared 3 years. Murky dirty blonde body, white collar. Smells of vinous grapes, barnyard funk, bright french oak, and vague floral and fruited berry notes. Taste has the grapes and funk carry with notes of flowers, raspberry, and grain supporting. Light yet somehow deep, the carb a little higher but the vinous and funky nature carries through the sip. Paired great with foie gras and braised beef cheek

750ml capped and corked bottle into a 3F glass.

No head or lace. Bright goldenrod. Nose is macerated white grape. Sweet iodine, cane sugar, white grape skin. Bright and lively. Beer opens white grape skin, cane sugar, lychee. Lightly tart lemon zest and logan in the middle. More white grape skin in the finish and aftertaste. Slight oakiness. Super unique. Body is light with ample carbonation. Prickly and lively on the palate and goes down aggressive. Dry finish and aftertaste.

Really good. Super unique and balanced.

A 750ml corked and capped bottle at the brewery, bottled on 24th March 2022. Poured into a Cantillon tasting glass.

Appearance: A clear golden orange colour with a slightly pink tinge, and a one finger white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.

Aroma: Tart, minerally, cactus, cucumber, grape skin, vinous, and lemon zesty.

Taste: Somewhat like the aroma, tart, minerally, kiwi, cucumber, melon, cactus, sweetish, raspberry, vinous, with lemon zesty notes.

Mouthfeel: Medium bodied with soft to moderate carbonation.

Overall: This was definitely interesting, as while still being vinous, the aroma and flavours were not what I expected. Especially those kiwi and cactus notes.
