Inspired by the lighter farmhouse styles of Belgium and France, but fermented using Nordic ale yeast and lightly dry hopped.

This one pours a brighlty hazy golden yellow color, with a small head, and lots of lacing.
This smells like pineapple, citrus, sharp grassiness, lemongrass, and a fruity funk.
This works extremely well for me - it's one of the best beers I've had fermented with Kviek yeast. It's very pineappley and funky, with some soft grassy bitterness, and some bicuity malt.
This is crazy drinkable, with a really great balance to it, and a soft and crisp mouthfeel.
I can't find a lot of fault with this one. It really was excellent.

12oz. can into Night Shift stemware.
Nose is lemonheads, citrus, cane sugar and a touch of pineapple. Just a bit of tartness with loads of lemon zest. Pretty mellow. Beer opens citrus, peppercorn and lemon zest. Lightly tart in the middle with orange and more lemon. Not tart but almost earthy and zesty. Finishes soft with a yeasty sweetness. Great balance. Body is light with moderate to ample carbonation. Not too prickly and not too pillowy. Goes down nicely aggressive with a dry, slightly sticky finish. Super drinkable.
Not a beer that's going to wow you, but one that I'm happy to drink all night long.

On-tap at NoMad Restaurant, New York, NY
A: The beer is hazy yellow in color. It poured with a half finger high white head that left a short head covering the surface after it died down.
S: Light to moderate aromas of biscuit malts are present in the nose along with a splash of lemon.
T: The taste follows the smell and has additional notes of pale malts.
M: It feels a bit more than light-bodied on the palate and has a moderate amount of carbonation.
O: This beer is very easy to drink and goes down very quickly. It makes for a good accompaniment to food because it isn't heavy in flavors or body.

a grisette thats pretty darn delicious and drinkable, i thought the quality of the beer across the board here was very high, i liked all of them that we had. this one is kind of new school in an old school style, due to the hops, which are highly botanical, even gin-like at times, things like lemongrass and verbena and even like fresh thyme or something, combined with the belgiany esters in the nose and when it warms, its much less about the grain that i normally look for and even demand from a grisette style, but i do get some raw wheat and perhaps traces of rye malt which pair well with the yeast here. less funky than it could be, but clean at the end for how much yeast character is there earlier on. nice fluffy feel, feels way more fluffy and big than its light abv suggests it should, and i dig that in this style, awesome carbonation too. the hops are cool and different, especially with the yeast, but they do take over the beer a bit, and make it a little less traditional and grounded than i like in these. a neat modernization of this though, and a very well made beer overall. i see why folks love this place.
