Our interpretation of a mixed culture, farmhouse style. Dry-hopped extensively and exclusively with Mosaic hops. 100% Brettanomyces Fermentation.

500 mL bottle. Big white head on a clear golden body. Smells of very pungent hops. Strong brett. Hops and brett dominate the nose. Hint of theraflu. Tastes better. Hop flavor is discrete and doesn't muddle the brett. Still loses all of the malt simplicity. High carbonation. Medium light body. This isn't as nice as the regular. Hops overcomplicate it.

Huge tropical fruit nose. Pineapple. Pear. Passion fruit. Tangerine. Mosaic hops shine on the nose with some fresh cut grass notes from the Brett. Balanced and dry. Very refreshing and fruity.

Bottle from the brewery
Pours a slightly hazy deep yellow color with a decent sized bubbly white head with moderate retention. Fruity juicy tart hop aromas provide a nice counter to the earthy funky onslaught on the nose. Light fruity flavors add some great depth in the flavor against an earthen funk. Light metallic notes and a bit of a gritty mouthfeel. Pretty tasty brew.

Stopped by the brewery this afternoon got a few growlers filled and picked up a few bottles. My first taste was the Mosaic Dry Hopped Sylph. It poured a light golden color into my Deciduous glass. A nice white head formed on top that dissipated quickly. The mosaic hops come through in the nose along with the nice tart fresh smell. The taste follows the nose with the mosaic hops jumping to the front but not over powering the great tart crispness in this beer. There is great carbonation from the bottle fermenting. I'll be the first to say I'm not usually a big fan of this style beer but this beer is very well done nice hops and great flavor. I should have bought more why I was there today.
