Simcoe-hopped pale ale.
We dialed up the dry hop load and dialed down the ABV of our Beef Dipped recipe for something as flavorful and aromatic, but a little less complicating to having a productive day.

Pours a hazy pale gold with a finger of foamy head that slowly dissipates to a thin ring with a little lacing. Aroma of citrus and pine. Taste follows nose.

poured from a 16oz can into a veil willi becher pint glass. pours a hazy gold with over a finger of firm white foam head. aromas of blueberry and pine. taste mostly follows with a hint of citrus but it mostly mirrors the nose. medium-full mouthfeel. really nice hazy easy drinker.

Bright golden orange liquid comes alive in a glorious roil of haze that pushes a pillowy white head north of two fingers. Solid retention, scattered, yet fluffy lacing.
The nose abounds with lemongrass, mango, orange zest, berry, hints of herbal spice, and a cool nod toward weed. An undercurrent of crackery malt peaks in as well.
Wow. Just as the nose foreshadowed, citrus splashing around with berries and mango, but...there's more. Now I am finding flashes of peach, melon, some malt sweetness, and a bittering finish that is nuanced and carries a hint of a flavor version of the smell of fresh cut green onions...at a distance. I know, hard to nail that part down, but that's my attempt at it.
The mouthfeel is downright luxurious. Medium heft, soft and fluffy. Divine. Great carbonation.
Overall: please distro to So Cal.

Good head production and retention; excellent lacing. Almost completely opaque and turbid body, in keeping with Hop Butcher's style. This may be labeled as an APA, but given the emphasis on Simcoe and the NE IPA-like appearance, I'm guessing this drinks much like a modest ABV IPA.
Intensely juicy nose does nothing to dim that impression. Peach, mango, melon, lemon, mild dankness, resin, pine, some earthy pungency.
Any impressions of this being an IPA are ... well, they're certainly not dashed on the palate. This is a juicy hop bomb, and manages to punch a couple of classes above its weight, reminiscent of the Derivative series from Proclamation. It used to take imperial levels of booze and malt support to reach this kind of juiciness.

Session IPAs often disappoint me, coming across as fizzy and light, more like hoppy seltzer water. THIS is the proper approach to producing a hop bomb on par with any IPA, while reducing the ABV to a more modest level (albeit still well above session strength), and surely the calories at the same time. This is not a classic APA, but it's a delicious A(I)PA.

Taste follows the nose with notes of prange, mango, orange rind, lemongrass and fresh green grass with a moderate bittersnss, there is a mild sweetness but that bitterness on the back end really cuts it.
Feel is medium to full bodied, smooth, with bright carbonation. the bitterness leaves a slightly drier presence on the palate.
Overall a delicious pale ale from Hop Butcher. This drinks like an IPA - and at 6% its small wonder. - but regardless its a delicious beer.
