another beautiful beer from these guys, this one done with raspberries. the fellow behind the bar in there tells me the berries are second use, and that they have previously contributed to the lambic inspired series they just released. pretty cool, and that beer must be insane, because this is still ridiculously raspberry heavy, especially considering the berries have already been used in a beer once! i have never heard of this process before, of reusing fruit, but its mighty clever, and the beer here is awesome that it yields. as red as red can be, clear looking but totally saturated with color. even the head is stained red, an inch tall and pretty for sure, dead sexy beer. the aroma is tart fresh raspberries, just pureed, like something i want to pour over ice cream, with just a bit of clean sour tang to it, much cleaner and sort of minimalist from a yeast standpoint than a lot of their other beers. the flavor is great too, definitely led by the fruit, as natural as i have ever tasted it in any beer, almost atrial rubicite clarity of the fruit. so awesome. a nice light bretty funk is here too, but subtle for these guys, and then a delicate and super tidy lemony pucker from the bacteria, still well behind the fruit, which oddly never makes this very sweet for how much of it there is in here! carbonated like champagne, almost explosive on the palate, but a little dense too, and without as dry a finish as i often like in my wild beer. less delicate in feel than in taste. downright delicious beer, of impeccable quality, these guys are really getting it dialed in. havent had anything other than awesome beer over here in a long time now! dont miss this one! it also has me hankering for those lambics, they must be so fruity!!!
