CYGNUS: Cherry (Blend B) is a blend of three years of traditional, Lambic-inspired, coolship, spontaneous ale that follows the Méthode Traditionnelle guidelines. The blended base beer was refermented with two different kinds of whole tart cherries, Montmorency and Balaton, including the cherry pits which adds to the classic complexity and flavor associated with Kriek. After several months of aging the beer on cherries in oak barrels, the beer was removed and stored. More base beer was added to the cherries, extracting more color and a milder nuanced flavor. Three blends were created, each with their own unique character and final fruit level.

L: A light pink cherry color.
S: Strong, tarty cherry notes.
T: A clean, sharp cherry flavor with a light salty, woody finish.
F: A very, tarty cherry.
O: A simple but good cherry beer.

Had this at Sour Fest 2019 at Hops & Pie in Denver, Colorado.
Pours a bright red, the other end of the spectrum from your usual darker standard red ale. Thin light pinkish white head that settles into a 1/12" film. The aroma is massive cherry. Montmorency & Balaton doing all kinds of good things in tandem.
Taste is possibly the best thing Black Project has done, which is a big compliment because almost everything they've done is good (and expensive). Dry, sour, tart cherry skins pushing a luscious fruited edge at all times. Its so easy to drink, and it doesn't resort to being sour on steroids or battery acid. Carbonation on point as always. Even the commercial tug job about the pits being used actually checks out, a light nutty, almond like presence I presume is from the pits.
I think I was talking about one of de garde's krieks (or kriek-like beers) competing with Belgium. So does this. So does Allagash, Jester King, Russian River etc. . . This is creme de la creme stuff (except for the price).

Appearance: Pours a raspberry infused peach juice color with a mauve head that leave spotty lacing behind
Smell: Cherry and almond with fruit pit tones buttressed by an oaky element
Taste: Cherry and almond forward with a delicate fruit character; funky and oaky elements build, through the middle and linger into the finish
Mouthfeel: Medium body with moderate carbonation

Sample at Mikkeller Beer Celebration Copenhagen 2018, Green Session. Hazy dark ruby color. Aroma has earthy notes with intense cherries and pits. Taste is spritzy, sour, dry, mineral, fruity with cherry preserve juice flavor and some yeast funk.

This beer was a gusher, and over carbed. Attempts were made to reduce the carbonation, but the beer never quite recovered. I think there's a nice cherry sour in there somewhere, but man, this was a disappointing bottle.
