a new one from these guys done with sage, a really cool beer, stronger than many of theirs, but i think a little more substance helps the sage from being too much. i like this being a little less acidic than many of them have been lately too, not so sour, more drinkable in that way, but also i think easier for whatever ingredients are added to come through, here the sage is pure and clean and vibrant in here, without being overdone at all. i really like the balance here too, enough wheaty malt body to make it a bit earthy, and a light spruce note or something, juniper maybe, that gives this a holiday warm energy. some lemon and orange tang to the sour profile, more bacterial than funky, but both elements are here, and better carbonation than a lot of them have from the tap, although its still a bit underdone. sage is awesome in here, fresh and interesting, a cool compliment to the yeast complexion. the alcohol is super well hidden too, i never would have guessed it to be this strong. tasty beer this time of year, one of their best in a little while here...
