STARGATE begins as a custom blend of 9-10 month old spontaneous solera sour golden base with 100% coolship caught microbes. Over the course of this year's peach harvest we selected three different Palisade peach varieties during different points in the season. Redhaven, O’Henry and Glohaven peaches were added to a number of different Bourbon Whiskey Barrels, creating a delicious, fresh peach flavor that plays wonderfully with the delicate apricot notes produced by our native yeast. Instead of blending the three different peach beers, we thought each were complex and different enough that we should package them separate, each creating a different peach nuanced beer. Moderate acidity is backed by subtle hints of deep bourbon whiskey and oak vanillin. This beer will develop in the bottle for years, however much of the fruit flavor will diminish or change, so we recommend enjoying at least one bottle fresh if you do intend to cellar.

A - Pours a clear deep gold with a large fizzy white head. The head fades into a thin ring leaving some light soapy lacing.
S - Aroma is sour peach, oak and bourbon.
T- The taste is peach, apricot, lemon, green apple, vanilla, oak and big lactic funk in the finish.
M - Medium body with low carbonation. Still mouthfeel with soft bone dry finish.
O - Really well done.

Aroma: tart peaches, oak, faint bourbon, some musty hay.
Taste: moderately tart with a bright peach flavor. Apricot was also there. Faint oak, vanilla, and bourbon. Some funk but minimal.
Feel: medium bodied and sticky on the finish. Medium carbonation.
Overall: delicious. Complex fruit and great barrel notes.

T - barnyard funk, rotting peaches, hay, oak, a hint of leather. Acid is restrained but plays a role. No bitterness. Low sweetness. No booziness.
F - medium-light body with appropriate carb.

500 ml bottle into tulip glass, bottled in 11/2018. Pours fairly hazy/cloudy medium golden amber color with a 1 finger dense and fluffy white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a light amount of streaming carbonation. Aromas of big juicy/tart/tangy peaches, fruit fuzz/skin/pits, apricot, lemon, lime, orange, grapefruit, pineapple, pear, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of peaches, fruity/funky/acidic yeast, oak barrels, and moderate pale/wheat malt notes; with big strength. Taste of huge sour/tart/tangy peaches, fruit fuzz/skin/pits, apricot, lemon, lime, orange, grapefruit, pineapple, pear, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of peppercorn, leathery/musty/lacto funk, white wine vinegar, and yeast/oak earthiness. Light-moderate fruity/lactic tart/sourness, fruit tang; and light yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy peaches, fruit fuzz/skin/pits, apricot, lemon, lime, orange, grapefruit, pineapple, pear, mango, melon, red/green apple, white grape/wine, oak, hay, straw, grass, wheat, cracker, white bread, light peppercorn/funk/vinegar, and yeast/oak earthiness on the finish for a while. Amazing complexity, robustness, and balance of peaches, fruity/funky/acidic yeast, oak barrels, and moderate pale/wheat malt flavors; with a great malt/tart/sourness, and tangy fruit balance; with minimal puckering/astringent flavors after the finish. Fairly crisp finishing. Moderate increasing dryness from lingering tart/sourness, and tangy fruit, Medium carbonation and light-medium body; with a very smooth and moderately creamy/grainy/acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol for 6.9%. Overall this is an incredible fruited spontaneous sour/wind ale. All around incredible complexity, robustness, and balance of peaches, fruity/funky/acidic yeast, oak barrels, and moderate pale/wheat malt flavors; very smooth, easy, and fairly crisp to drink with the moderately acidic/tangy/tannic/drying finish; not overly lactic. Amazing balance between juicy/jammy peaches and Brett/Bacteria complexity; with great oak presence, and pale/wheat malts against acidity. Zero residual sweetness with crisp acidic dryness. A highly enjoyable offering, and amazing style example.

Lightly hazy gold-amber with a persistently fluffy head white head settling to a thick blanket leaving a halo of lace.
Nicely tart and delicious peach is sticky and juicy and herbal. Very orchard fresh and leaning sweet, it's immensely enjoyable.
