HABU is a blend of three-year traditional, Lambic-inspired, coolship spontaneous ale that follows the Méthode Traditionnelle guidelines. The blended base beer was refermented with two different kinds of whole tart cherries. We used Montmorency and Balaton cherries and included the pits in freshly dumped Law’s Whiskey barrels.

After a few months in the Law’s barrels, HABU was moved into new Heaven Hill barrels and vanilla bean and cocoa nibs were added to the beer. The double barrelling process allows the oak vanillin and bourbon character to shine alongside the cherry, chocolate, and vanilla harmoniously. The resulting beer is complex and fruity with a strong bourbon back bone and nuanced vanilla and chocolate characters.

I'm not sure there wasn't something wrong. 500ml bottled Jan 2019. Drank July 2020.

Appearance is a pretty pink/red. Very little, if any visible carbonation.

Smell is good at first. Wild funk with a little cherry. Turning into plastic/chlorine at the end.

Taste is the same. Starts great. Proper wild tartness going into tasty cherry tartness. Quickly turning into plastic/chlorine.

Was not able to drink more than a couple ounces. I had been really excited for this beer.

Presentation: 500mL corked and capped brown bottle with the bottling month and year printed on the label. Served in a Rastal Harmony tumbler.

Appearance: A thin layer of bubbles shows up during the pour but goes away almost immediately and it doesn't leave behind any lacing. It's a beautiful, hazy, bright crimson color.

Smell: There's some sour funk at first with notes of humid wood, yogurt and lemon peel. That's followed up by some cherries, marshmallow and dark chocolate.

Taste: It's rich and complex with more and more flavors showing up as time passes. It starts quite tart with cherry and lemon; then some brown sugar, caramel and vanilla show up alongside notes of yogurt and whipped cream. Finally there's darker notes of charred wood and dark chocolate.

Mouthfeel: It's juicy, smooth, creamy and refreshing. Due to the sweetness it starts getting a tad cloying after a while but it's manageable.

Overall: And absolutely fantastic beer in every sense. There's not much else to say other than: Well done Black Project!
