A Nordic-style Farmbier fermented with our own Viking yeast and conditioned on both tart and sweet cherries for a full bodied experience with huge aromas of cherry pie and slight amaretto.

Clean and simple, not very funky or very spicy yeast. Subtle cherry flavor, not too tart.

Peachy amber cloudy body, white collar. I smell the saison yeast and botanicals up front before sweet cherry takes over, honestly a cherry blossom combination overall, pleasant. Taste is delicious, I really like what is going on with the interaction with the cherries and the underlying malt and yeast especially, not too bread or bready or floral, pieces of both. Cool and mouthwatering, crisp too. However it is hard to say that it is a saison, if anything a cherry belgian pale or even light lager almost fits more. That being said love the beautiful simplicity and artful balance going on, so yeah, this rating is all over the place.
UPDATE: So apparently it is a farmhouse lager, makes sense! Rating boosted accordingly

Bought from Tavour.
Interesting brewery.
Interesting ale. But really, what is it ?
Interesting to call this a saison... but why not ? After all, it probably is our most versatile style in terms of malt, yeast and spicing. (What else is there to beer but water?)
Hipster Blood Looks different (more like a NEIPA) ... but I've got an open mind. Smells are full of fruit (cherries) driven even more by malts wanting to become fruit-like. The yeast is driving this yearning-to-be-fruit and it drives the Taste to the finish: a refreshing and pleasant fruit medley. Hipster Blood has sufficient carbonation to cleanse the palate... which is what saisons do.
OA: I like these guys. Great looking graphics on the cans, artistic nice (as opposed to artistic weird as is too often the case.) Separatist is helping to revive Easton's center, an old river town. They opened a second taproom in South Philly. (I hope both can open safely after lockdown.) Separatist is committed to standard fare and foeders, so a healthy variety for a young brewer. I wish them well.
6/16/20. I had the second can from Tavour while playing tennis (I shared and all agreed that it was very refreshing.) While both cans were a good experience, I hope my next beer from Separatist is a more traditional saison. In the meantime, I'm keeping count at UnTappd.
