Old Sun is the barrel fermented and inoculated version of our 5.8% farmhouse inspired ale New Sun. Fermented and conditioned in red wine French oak barrels for 12 months, then bottle conditioned for 2.5 months, Old Sun has notes of zippy Apple, pear skin, white wine grape, beautiful yet restrained acidity, wonderful carbonation, with a Chardonnay body.

Light apricot lean to the amber, hazy body that keeps little more than a modest ring around its head. Sour-intending fermentation is present from initial sips, even if the wine barrel isn’t coming to me. Granny Smith apples dominate until I swirl the glass, releasing some wine notes (though seemingly not really “red” in nature) and hints of ruby grapefruit.
Taste brings a little sweetness to all the notes from the nose, though the flavors are more forthcoming from first sip. The tartness still wins easily, and the dash of sweetness is like the flesh of red delicious apple flesh paired with the whole Granny Smith apple. It also adds a little heft to the beer I wasn’t expecting at around 6%, perhaps not helped by the lighter than average carbonation.
Overall, though, a very enjoyable tart saison that isn’t hiding nor hammering you with the barrels it rested in.
