Past Paths is a bone dry, highly bubbly, thoughtfully bitter saison. Past Paths was designed, brewed, and carefully watched after by our Funkhaüst manager Nick. Brewed with a blend of oats, spelt and Virginia organic raw wheat then hopped with Tettnang and a bit of Amarillo. This beer was open fermented in stainless with a blend of both domestic and wild yeast before being sent to French oak barrels atop raw Virginia honey for a secondary fermentation and aging.
