this is one of those breweries i have not had nearly enough from, this is just my second, but am also sort of obsessed with, stalk them on my wifes instagram and that sort of thing, i love what they do conceptually and visually and now its amazing to taste some of their beers, huge thanks to my good friend back east for shipping a few cans out for me to treat myself to. this is an oak fermented ipa with citra and mosaic, and its subtle and amazing, modern but classic, so hard to do in a single beer but they have done it brilliantly. sort of a saison meets an ipa. the pour is hazy and pale, soft and active, looks wheaty and fluffy, the head is pure virgin white with wonderful airiness and lace, lots and lots of bubbles, some can conditioning perhaps. it does have a little saison sort of rustic yeast element to it, but its really mild and its the juicy hops that pop for me here, a different side of both of these varietals, unique with the oak, more bitterness here too somehow, even though it seems like a mostly dry hopped thing, there is a saaz sort of element on the finish as well. i love the oak on it, not heavying at all with the effervescent carbonation but it adds a lot to this, its grassy and ever so slightly funky but no real brett character or anything at this point. at first i was kind of surprised this wasnt more dramatic, but as i sip on it i end up appreciating how well refined and calculated it is, drinkable as they come in a style like this, its a wow beer. light vanilla, marmalade, and green tea as it warms, at once refreshing and quenching but also wildly complex. pillowy soft and fancy feeling to me, this was delicious and something i hope to drink again. this is the kind of beer i just love to drink, so far they seem worthy of their astronomical hype...

Served in a tulip glass

This beer pours pale yellow and hazy. It is covered with a mountain of off white head that leaves spotty lacing.

The smell is lemon and spicy esters from the yeast. I get some grass.

The taste is lemon grass and spicy. There is a slight dank bitterness. Hints of funk.

Medium bodied with an effervescent mouthfeel

This is a very solid saison. It tastes like a classic in the American version of this style.
