just my third ever beer from this highly acclaimed operation, stoked my buddy sent this out for me, cracked it for my birthday last night and it was up for the occasion. its an open fermented saison, and i am immediately struck by how hoppy it is, noble for sure, even saaz specifically, green grassy with a bitter grip on the palate on the dry swallow, not as delicate and fermentation forward as it looks or as i thought it would be, less rustic and funky than anticipated too, no real sign of open fermentation in the wild capture sense or anything, nothing like that here really at all to me, more of a belgian ester profile, maybe a french saison strain, white wine, light phenols that exacerbate the hops on the finish, a hint of iodine, a raw wheaty vibe to the grain base, maybe oats too, and a fluffy but light mouthfeel to match. this is really well refined and obviously expertly made, the quality makes a bigger impression on me than the taste does, love all the bubbles too, seems almost can conditioned, alive and soft and so dry. really nice beer, id love to try some of their more funky stuff, but this is a cool mix of hops and yeast in a very drinkable brew, the name suits it. ive got the thirst for the veil now more than ever!
