The second of our “Melancholia &...” series of wild beers in which we thoughtfully blend Melancholia, our fresh hoppy spelt and rye Saison with something special from our funky barrel cellar. This rendition is a blend of fresh, briefly oak fermented Melancholia and mature oak fermented Witbier. Unique restrained impressions of crisp apple and fermented fruit. Bottled-conditioned for roughly 2 years.

The beer pours a nice white and foamy head that looks pretty good while the beer itself is a beautiful clear gold with slight amber notes to it.
The smell is very good. It has a spicy rye smell mixed in with an earthy and bitter tea hop note. There is also a moderate funk note too that also moves into a slight vinegar note. The yeast note has a bread note to it but is hidden very well by the other notes.
The taste is very good. It has a moderate funk note that sometimes descends into vinegar. There is a good spicy rye note mixed in with the earthy and bitter tea like hop notes. There is also a slight orange note in the finish.
The feel is good. It has a medium body with a smooth texture and a crisp finish. The beer is moderately acidic and isn't too challenging.
Overall, a delicious beer worth having on a hot day or just to enjoy.
