Bought this 32 ounce can @ Beer Drop. (Too much for one old man at one sitting!) But at least it's only 17 IBU. Only 6 check-ins @ Untappd and they are all drafts. So, I'll make the first can review after dinner.
My pour yielded two inches of foam in a chalice, but it died quickly as the yeast does not produce enough swirling protein. Without an active yeast, the Smells are muted; a nice hard fruit medley of apples, maybe peaches and pears that miners might appreciate after a long labor. Tastes follow closely although the late palate has an herbal after-taste that tries to dry out the juice. Despite too few bubbles, Freestyle sufficiently cleanses the palate for the next bite of my plate of leftover medleys. So I recommend #8 for New Terrain's diversity in its food-truck-a-day program. A good table saison.
I have no solid suggestions for New Terrain to improve #8. I didn't see any other saisons on its website, so #8's evolution is a mystery to me. But... Having had dozens of Colorado saisons and my concluding that yeast operates differently One Mile High, New Terrain's challenge nonetheless is in good company. And whatever thinner air may take away from the yeast, New Terrain and many of Colorado's micros remain Belgian-inspired in my book.
