Was lucky enough to get this beer and a bunch of others from Nick on a recent work trip to Colorado Springs, Colorado. Cerebral’s website called it “Mixed Fermentation Saison aged 15 months in Chardonnay barrels. Conditioned on Meyer lemon and Vanuatu vanilla beans. Adaptation is a tricky thing. Poured a medium yellow clear color with three fingers of frothy white head. Lots of bubbles coming up along the sides and from the bottom of the glass. Excellent uneven foamy lacing. Excellent foamy retention. (Sight - 4.50)
Smelled Meyer lemon, lime, dish soap, herbal, Windex, vanilla, peach and Chardonnay barrel. More leathery oak and some basement aroma from the can, but not quite as good. (Smell - 4.00)
Tasted Meyer lemon, lemon candy, vanilla, lime, dish soap, herbal, peach, Chardonnay, leathery oak and basement aromas. (Taste - 4.00)
Medium body. Creamy texture. Lively carbonation. Abrupt, bitter finish. (Feel - 4.00)
Was back and forth on this one. Parts I really liked and then it got a little too much. Overall it was outstanding though. (Overall - 4.00)

Look: Pale, hazy yellow like apple juice. No head except a ring of bubbles around the edge, but lots of carbonation bubbles stuck to the sides of the glass.
Smell: Sour, yeasty, and practically musky. Not altogether pleasant with how striking it is, as if it's gone off.
Taste: Not puckeringly sour, but with notes of dill, vinegar, and sour apples mixed with the band-aid taste typical to wild fermentation.
Mouthfeel: Thin and highly carbonated.
Overall: This is a saison that just goes too far into the weird level. Many beer drinkers will be scared off by it, and even experienced ones may think it's too much.
