This barrel-aged sour started with a blend of 3 and 12 month old saison re-fermented with our house mixed culture. Then, we loaded up oak barrels with whole, fresh organic Hood River blueberries (about 3.5#/Gal). We aged on fruit for an additional 4 months. This is an assertively sour beer with loads of intense layered, complex blueberry flavor and a clean lactic finish.
