We teamed up with our friend Reverend Nat to bring you this truly experimental beverage. The mash consisted of rice hulls, flaked oats and white rice inoculated with Koji. In the kettle, the oat milk was combined with 100 gallons of apple juice, fermented with our house yeast and finished off with a Mosaic dry hop.

On tap at brewery:
Lightly hazy yellow beer has an eyeball of remaining head looking at me, the main component being a medium white ring.
Scents of rice with a bit of oat and an orchard fruit white wine. Taste has a tinge of the grains if I slowly draw it in, but the main flavors are of a light apple juice cocktail. The Mosaic is actually noticed in back as the “beer” warms, providing a light but not conflicting bitter note to the slightly acidic apple notes.
Interesting experimental brew that lean a bit to the cider in flavor sans a bit of the sweetness.
