Brewed with Japanese plum varietals, all grown within a 10 min. drive from the brewery. Many of the plums used in this blend were of the Shiro variety, which are a pale yellow plum that exhibits plenty of twangy sunshiny character...this might be the most acid-forward fruit beer we’ve made thus far (with almost all of the acid coming from perfect, whole local fruit).

500ml bottle. Label is marked 'BOTTLE // 10.2021 VARIETY // SHIRO'. untappd calls this a Plum (2021) beer.
Cloudy, pale gold colored body. No sediment is evident. Persistent pure white head. Leaves behind webs of lacing.
Aroma is moderately sweet plum, with barnyard funk. Touch of oak
Taste is funky sweet (which means a balance of sweet and tart). Lots of plum flavors. Funk is horse blanket, leather, and barnyard. No pencil eraser funk. Light plum funk in the aftertaste. Touch of oak throughout.
Medium mouth feel. Effervescent texture, which keeps the mouth coated. At the same time there is a very dry finish, which cleanses the mouth. Excellent carbonation.
The beer tastes sweet as it enters the mouth but right away the yeasty funk brings some tartness for immediate balance. Seems very light/delicate in the mouth, but has considerable complexity of nose and flavor. Very much a beer I will want to try again.

wonderfully rich plum character, sweet and ripe, balanced by a nice tart quaility and mellow acidity, slightly lactic hinting at plum yogurt, it is funky and has that classic suarez country quality throughout. such a cohesive beer and all the parts come together to create something truly special. wow! light, effervescent, crisp, clean.

This one pours a light and pretty looking pinkish color, with a small head, and a little bit of lacing.
This smells like fresh and tart plum, with some oak, grainy sweetness, lemon, and citrus.
This has such a wonderful soft flavor to it. The description promises the most acidic beer yet from Suarez, and I'm not sure I really get that. It's mildly tart, with a soft and rolling plum flavor, and a touch of lemon and oak. It's simple but immensely pleasant.
This is light bodied, clean, and incredibly drinkable. It's a treat to drink due to how soft and delicate it is.
This is a super wonderful beer.
